IT'S ALL IN THE SAUCE | 05.13.2025

During this cooking class with chef Christian Volnin, you'll master the essential basics of preparing chefs' sauces. We'll look at five sauces of different origins, textures and flavors. We'll prepare these sauces together, and you'll be able to take some home with you.

These sauces will be prepared and enjoyed with a T-bone steak (grilled), roasted baby pommes with rosemary and truffle powder, and a wide selection of veggies to choose from!

The 5 sauces : 

- Béarnaise: Pepper mignonette, shallots, fresh tarragon, white vinegar, eggs, butter
- Jus réduit: Most often made with meat scraps, onions, carrots, parsley and red wine
- Hot pepper sauce: Made with fresh hot pepper and pineapple
- Sweet & Sour Sauce: Raw cane sugar, vinegar, soy sauce, tomato puree/concentrate
- Chef's Salad Sauce: Made with mustard, Swiss honey and other "secret ingredients" of the chef's own
