Discover our cooking class on winter vegetables, where you'll learn to master different cooking techniques, work with textures, and sublimate flavours with spicy seasonings for added originality. During this cooking class, you'll also learn how to prepare and cook winter vegetables in an innovative way, working them like meat.

- Starter: Beetroot tartare with miso mayonnaise and black garlic 
- Main course: Red cabbage in salt dough, served with a green pepper, Jerusalem artichoke and hazelnut sauce.  
- Dessert: Salad and squash sorbet with verjuice, white chocolate sauce and cardamom walnut oil.

This winter culinary voyage is led by Pierre-Pascal Clément, an experienced chef who has worked in renowned establishments such as Le Pavillon in Zurich and Domaine de Châteauvieux with Philippe Chevrier. In 2024, he opened his own restaurant, Au Chasseur, in Fribourg. Come and discover how to transform winter vegetables into gastronomic creations worthy of the finest tables.
